The Dingle Whiskey Distillery came
into being in Winter 2012 and was
founded by three independent spirits
Oliver Hughes, Liam LaHart and Peter
Mosley. We have always had quality
over quantity at the forefront of our

We never had any interest in distilling
enormous quantities of bland whiskey.
We aren’t passionate about bland
spirit. We’re hugely passionate about
fl avoursome, well-crafted spirit.
To achieve the fl avours we want to achieve in our whiskey, we use three distinctive,
hand-crafted copper pot stills to create what we believe is the ultimate Irish whiskey.
Their distinctive design, encourages refl ux and has much to do with the remarkable
smoothness and purity of our spirit.
Alongside regular small batches of Dingle Whiskey, we produce award-winning
Dingle Vodka and Dingle Gin. Dingle Gin was awarded the title of World’s Best Gin

Micil Distillery is the first distillery in
Galway in over 100 years. It’s headed up
by Pádraic Ó Griallais, a 6th generation
distiller passionately continuing a 170
year old family tradition.
The distillery traces its roots back to
1848, when Pádraic’s great-great-great
grandfather, Micil Mac Chearra, began
producing poitín in Connemara.

Echlinville became the fi rst newly
licensed distillery in Northern
Ireland for over 125 years when it
began production in 2013.
A true farm distillery, Echlinville’s
new-make spirits are distilled from
barley grown and harvested from
